
Rachel Koay
Rachel Koay, MPH, RD, LD (Austin, TX) is the Chief Impact Officer for Feeding Texas. Rachel helps define and implement strategy for the organization and oversees statewide strategies that advance equity and address food insecurity through SNAP enrollment, community nutrition initiatives, and healthcare partnerships. She and her team are focused on best practices and work in partnership with Texas food banks to foster innovation and improve reach across Texas. Trained as a public health dietitian, her expertise comes from working with community organizations to improve health among refugees, people experiencing hunger, and children from underinvested communities.
Rachel hails from Sugar Land, Texas and holds a Master in Public Health from the University of Texas School of Public Health with a focus on program design, implementation, and evaluation. She holds a BA in Plan II and BS in Nutrition from the University of Texas at Austin and completed her dietetic internship at the Maricopa County Department of Public Health.
